The Hunter Valley is set to welcome its first new-build luxury resort in more than two decades with the opening of Laval Hunter Valley in late 2027, rising across the hills of the historic Lindeman Estate in Pokolbin.
Developed by private hotel owner HVL Hotels, the 165-acre property will comprise 65 pavilion-style villas positioned among the vines with sweeping 360-degree views. Guests will be able to fly in and out via private helicopter, while an ambitious food, wine and wellness offering is designed to place the resort firmly on the luxury travel map.

A new luxury hotel group has paid $25 million for two landmark Hunter Valley wineries, Ben Ean and one of the Drayton family estates, with plans to build a $120 million five-star hotel and tourism complex in some of Australia’s oldest vineyards.
The HVL Hotels group is planning the luxury complex for a consolidated 68-hectare site in tourist hotspot Pokolbin, about a two-hour drive north of Sydney.

A new retreat is coming to the Hunter Valley, and it’s set to redefine the meaning of five stars.
Hunter Valley is a well-known and loved wine region in Australia, but many will agree that while its accommodation options are wonderful, there has definitely been a gap in the ultra-luxury offering. Not for long. HVL Hotels has announced a new five-star-plus offering coming to Ben Ean Estate, the oldest vineyard in the country.
The 65 architecturally designed suites of this development, in partnership with Figure 8 Capital, will be set on the grounds of the original Lindeman’s Estate within Ben Ean. Each will be spacious, between 49 and 58 square metres, with stylish features including a sunken lounge area and panoramic views of the vineyard.
